Bordeaux

Bordeaux refers to a wine from Bordeaux, France and is a blend of grape varieties. While there are both red and white Bordeauxs, the name itself is primarily associated with the red wine blend. Bordeaux produced from the left bank of the Gironde estuary that flows through the center of the region tends to be higher in tannins, alcohol, and acidity, whereas Bordeaux produced on the right bank lean towards a softer, less tannic, lower in alcohol, and less acidic wine. More than 90% of Bordeaux wines are made with Merlot and Cabernet Sauvignon and its primary flavors include black currant, plum, graphite, cedar, and violet. The perfect complement to red Bordeaux include meals that feature rich meats like filet mignon, beef brisket, buffalo burgers, pot roast, venison, duck, and goose. Bordeaux is best stored and served just slightly below room temperature at around 65°F and easily ages for 15 years.
